Another veggie-filled dinner! Everyone in my Well Nourished Family enjoys stir-fried rice, and I enjoy the fact that it is so easy to make! I also appreciate the fact that I can throw in any leftover vegetables that are in the fridge - tonight it was broccoli, carrots and green beans. I also happened to have fresh ginger, which added a nice punch of flavor. The brown rice cooks up fast in a pressure cooker or Instant Pot to help get this meal on the table in less than 30 minutes. Stir-fried rice can include meat, or just egg, if you want to make it vegetarian, or you can replace the egg with tofu and make it vegan. You could even use gluten free shoyu sauce instead of soy sauce to make it completely free of gluten! Ok so I’ve been wanting to go plant based for a while now but always made excuses and it was just pure laziness on my part but towards the end of last year just the thought of eating meat in particular and sometimes the smell was making me feel a bit🤢 plus I’m in my 30s now and get all kinds of weird pains, aches etc and felt like shiz a LOT so as of 2 weeks tomorrow..I think 🤔 lol I have been on a predominately plant based diet (some Chrissy chocolates fell into my mouth .. 😬 😂)and not gna lie it has been a bit of a struggle just trying to figure out what to eat and handle certain cravings etc but I’m so excited to have found this brand @frysfamily and in particular their new plant based pizza and dayaaaam it’s soo good!! coooookies, but make it healthy💌💫. . . so you’ve seen a lot of choc chip cookies on your feed, yo me too. and i can’t fight these cravings😤 so I opted for my own take on gf/ vegan cookies and ended up with these pups. they were kinda the result of complete boredom, and I swear this recipe was me eyeballing EVERYTHING, tasting as I went, and un-methodically following a recipe I created on the spot. honestly didn’t have too high of expectations for these but like- props to me for actually making them taste DANK while still being HEALTHY. Bc at the end of the day that’s really all we want, right?!. . . Anyway, if you feel so inclined, give these cookies a try, and you surely won’t regret it :). . . DRY STUFF: 1/2 cup coconut flour / 1/2 cup almond flour / 1/3 cup of rolled oats / 1 tsp baking powder / 1 tsp baking soda / dash of salt / 1/4 cup coconut sugar / dash of cinnamon. K now mix. . . WET STUFF: 2 tbsp vegan butter / 3 tbsp of maple syrup / 2 flax eggs / 1 tsp coconut oil / dash of plant milk. . . Combine with vegan chocolate chips, and bake in da oven for 12-15 min at 350F. Totally optional but I sprinkled some sea salt on top and it really brought out the flavaaa. Try it. Or don’t. 🤠🤠🤠 anywhooo have a great rest of your day!! The weekend is close :)

CHICKEN / BACON VEGGIE PREP • • • Makes 3 servings: - 12 oz Boneless Skinless Chicken Tenderloins - 6 strips of Applegate Natural Uncured Turkey Bacon - 1 tsp Extra Virgin Olive Oil - 1 package Frozen Stir-Fry Veggies - 1/4 cup Kraft Fat Free Cheddar Cheese First cook the bacon strips in a skillet on the stove.
