FIERY TOFU STIR FRY WITH ORGANIC BLACK BEAN SPAGHETTI 🔥🌶️ - Both working mad hours at the moment so it's been difficult to regularly post and even fit a full food shop in! Tonight's dinner was a complete mash up of whatever we had in and it worked a treat. So simple yet so tasty! For the Tofu Marinade; Soy sauce Sweet chilli sauce Crushed Garlic Maple syrup Olive oil Splash of hot water Black pepper We then fried this up with a combination of red onion, courgette, carrot, green beans, spring onion, red chillies. Also added a dash of cayenne pepper and ground cumin. Served with organic black bean spaghetti and steamed kale. 🤘🌱

„Kürbis Dal“ 🎃 Heute gab es eine Art Dal mit Kürbis und Kartoffel in einer Tomaten-Kokosmilch Soße. Gewürzt mit Kurkuma, Muskat, Piment, Chili, einem Spritzer Zitrone, Salz und Pfeffer. Im Schmortopf (Cocotte) 2 Stunden köcheln lassen. Serviert mit Natur-Rundkornreis und einem Löffel Kokosjogurt. // „Pumpkin-dal“ 🎃 Today, a kind of dal with pumpkin and potato in a tomato-coconut milk sauce. Seasoned with turmeric, nutmeg, allspice, chili, a little bit of lemon, salt and pepper. Simmer for 2 hours in a cocotte. Served with natural short-grain rice and coconut yogurt.

Miracle weapon when too lazy to cook. I find puff pastry with a little vegan cream fraiche and vegetables just always works. In this case I chose potato, thyme and mushrooms. ⁣ ⁣ 6-8 potatoes ⁣ 6 mushrooms⁣ 1 pack puff pastry⁣ 1/2 leek⁣ 2 onions⁣ 200g smoked tofu⁣ Oliveoil ⁣ 1 pot plantbased creme fraiche⁣ 2tb nutritional yeast⁣ salt, pepper⁣ Thyme⁣ ⁣ • Preheat oven on 220° C circulating air ⁣ • Cook your potatoes ⁣ • Chop the potatoes in pieces⁣ • Cut mushrooms in slices⁣ • Cut leek and onion in small pieces ⁣ • Sauté in oil and then set aside⁣ • Dry the tofu with kitchen paper then chop into cubes ⁣ • Heat up oil in a pan ⁣ • Cook tofu cubes crispy and deglaze with soy sauce ⁣ • Mix creme fraiche and nutritional yeast with salt, pepper and thyme⁣ • Put the puff pastry on a baking tray lined with baking paper⁣ • Put creme fraiche on top and then sprinkle the tofu cubes, potatoes, mushrooms and onions on top⁣ • Bake for 15 minutes⁣ ⁣herbytartevegantarteeasyvegandinner

Takeout-style tofu and broccoli bowl by @woon.heng 🤤 This recipe is bursting with flavour! Get the recipe below: ​. ​Recipe⁣ Ingredients:⁣ ~ 1 block extra firm tofu, drain well & cut into cubes⁣ ~ 4 cups of broccoli florets, blanch and drain⁣ ~ Cornstarch mixture: 2 tablespoons cornstarch + 1/4 cup water⁣ ~ oil, chopped scallions, toasted sesame seeds⁣ ~ favorite cooked grain⁣ ⁣. 🍃Marinated tofu: Mix 3 tablespoons light tamari/soy sauce, 2 teaspoons Sriracha/chili sauce, 1 teaspoon toasted sesame oil, 2 teaspoons rice vinegar in a plate. Place tofu in the marinade and let sit for 5 minutes (refrigerated mine overnight), massaging occasionally.⁣ ⁣. 🍃Ginger-Chili sauce: In a bowl, mix together 1/4 cup light tamari/soy sauce (used 3 tablespoons), 1/4 cup agave nectar (used 1 tablespoon maple syrup), 1.5 tablespoon Sriracha/chili sauce, 1 tablespoon toasted sesame oil, 1 tablespoon rice vinegar, 1 tablespoon finely minced ginger with 2 tablespoons hot water until well combined. Set aside.⁣ ⁣. ✔️Bring a pot with half-full water to boil and quickly blanch broccoli, then drain. In a heated non-stick pan with no oil, pan fry marinated tofu cubes until golden brown on each side. Place tofu in a bowl. Using the same pan with 1 teaspoon oil, sauté ginger until fragrant, add broccoli florets & tofu & cook for 30secs by stirring continuously. Add sauce and give it a good stir until tofu is well coated. Finally, stir in cornstarch mixture & turn off the heat. Tadaaam! Pentru astazi am gatit o mega-cina la cuptor - mix de cartof dulce, radacina de telina, morcov si ceapa. Am gatit e prea mult spus, am curatit legumele, le-am taiat pai, apoi le-am aranjat in tava si am adaugat din abundenta condimentele pe care le folosesc mai mereu in mancare: busuioc uscat, oregano, paprika dulce, seminte de susan, putina sare si ulei. Ceapa am scaldat-o intr-un sos picant din otet balsamic, putin sos de soia si mustar. Iar spre final am stropit frumusetea asta cu un cocktail de usturoi, parmezan si apa.😁 Cuptorul si-a facut treaba, iar eu cu Priscilla am continuat sa ne petrecem timpul impreuna. Cand legumele au fost gata, le-am servit cu quinoa si orez fiert. Totul este posibil. Sa ai un job solicitant, sa fii parinte, sa cochetezi cu viata sociala, sa gatesti pentru cei dragi. Este vorba de alegerea si prioritizarea fiecaruia dintre noi.
